The will only controls or applies to the assets that are within your probate estate. What that means is your probate estate consists of those assets that are titled in your individual name at your death. There are various mechanisms for keeping assets outside of your probate estate if that's your goal. The short answer is the will only applies to those assets that are within your probate estate.
